Citrus Cardamom Bliss Duck Roast

Ingredients:
1 whole duck, about 5-6 lbs
2 oranges (1 zested and juiced, 1 sliced for garnish)
2 teaspoons ground cardamom
1 teaspoon ground cinnamon
2 tablespoons honey
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare the Duck: Remove any giblets from the duck and trim excess skin. Pat the duck dry with paper towels.
Season: In a small bowl, mix the orange zest, cardamom, cinnamon, salt, and pepper. Rub this mixture all over the duck, inside and out.
Citrus Filling: Stuff the cavity of the duck with orange slices (from the zested orange).
Tie and Tuck: Tie the legs together with kitchen twine and tuck the wing tips under the body.
Roast: Place the duck breast-side up on a rack in a roasting pan. Drizzle with olive oil.
Cook: Roast the duck in the preheated oven for 1 to 1 1/2 hours, or until the skin is brown and crisp.
Glaze: In the last 15 minutes of roasting, glaze the duck with a mixture of honey and orange juice.
Rest: Let the duck rest for at least 10 minutes before carving.
