Citrus Cardamom Bliss Duck Roast

Ingredients:

  • 1 whole duck, about 5-6 lbs

  • 2 oranges (1 zested and juiced, 1 sliced for garnish)

  • 2 teaspoons ground cardamom

  • 1 teaspoon ground cinnamon

  • 2 tablespoons honey

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons olive oil

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).

  2. Prepare the Duck: Remove any giblets from the duck and trim excess skin. Pat the duck dry with paper towels.

  3. Season: In a small bowl, mix the orange zest, cardamom, cinnamon, salt, and pepper. Rub this mixture all over the duck, inside and out.

  4. Citrus Filling: Stuff the cavity of the duck with orange slices (from the zested orange).

  5. Tie and Tuck: Tie the legs together with kitchen twine and tuck the wing tips under the body.

  6. Roast: Place the duck breast-side up on a rack in a roasting pan. Drizzle with olive oil.

  7. Cook: Roast the duck in the preheated oven for 1 to 1 1/2 hours, or until the skin is brown and crisp.

  8. Glaze: In the last 15 minutes of roasting, glaze the duck with a mixture of honey and orange juice.

  9. Rest: Let the duck rest for at least 10 minutes before carving.
