Saffron Elegance Butternut Squash Soup

Ingredients:

  • 2 cups butternut squash, cubed

  • 1 onion, chopped

  • 1 clove garlic, minced

  • 4 cups vegetable broth

  • 1 pinch Organic Saffron Threads from Kashmir

  • 1/2 cup heavy cream

  • Salt and pepper, to taste

  • Olive oil

  1. Sauté onion and garlic in olive oil. Add squash.

  2. Add broth, saffron; simmer until squash is soft.

  3. Blend until smooth. Stir in cream, season to taste.
